Base 100, hot process. Just add milk, cream and sugar.
Ingredients: Skim Milk powder, Dextrose, Cream Powder, Emulsifying agent: mono- and diglycerides of food fatty acids. Thickening agents: guar gum, locust bean gum, carboxymethylcellulose, carrageenan. May contain traces of Soy, Wheat, Hazelnut,Pistachio & Peanut. Allergens in Bold.
Instructions for use: Milk 88L, Cream 5L, Sugar 18.25kg, Base 100- 8.75kg. Cook to 85c and cool to between 2-5c. The ingredients in Pedro Davi “Base 100” have not been mixed and therefore this product is intended for full 120L batches only. Storage: Store in a cool, dry place.
